The "Profile" option in the Graph menu seems to allow you to assign error factors to columns, but in what specific cases would you use this?

You can set error factors in "Profile," "Contour Profile," and "Custom Profile" in the graph menu.
This function enables the setting of control factors that are less susceptible to fluctuations in error factors (robust engineering).
