In the Kagoshima tea market, the appearance and color of tea to be bid on are photographed with a digital camera for the purpose of improving the quality of tea. The images are analyzed for texture and color, and the values obtained from the analysis are fed back to each farmer via smartphone, etc., along with the price and the image. Last year, at this summit, we introduced the trend of the characteristics of first-fed tea using this smart information. This time, we focused on the color of the tea (color hue angle h), which has a large effect on the price of tea, and from the perspective of quality control at tea factories, we investigated the factors that affect the color of the tea by using JMP control charts and model fitting. The results suggested that the color of tea is influenced by the weather conditions during the growing season and on the day of production, in addition to the characteristics of the variety and the fertilizer management of each producer. In the future, we will use this information to provide guidance on picking and production at the site.
