It must have been amazing to live in both New York and Copenhagen - 2 cities that I absolutely love.
Cambridge is pretty amazing in its own way. I hope you enjoy living there and working here at JMP.

Hi Stan,
Love your question about my sourdough baking. I started this sourdough in November 2019 in Denmark, so it is almost three years old and did move with me from Denmark to the UK. If anyone is near Cambridge, UK and into baking, I can always provide a sourdough starter
.
Re: Welcome Nicole MastrellNicole, Welcome to the JMP family.
Have you moved your sourdough starter with you from NY, Denmark and beyond?
Or do you start fresh after each move?
Re: Welcome Nicole Mastrell@NicoleMastrell
Have you noticed a different flavor profile as your starter picked up local yeasts across locations?
Re: Welcome Nicole MastrellWelcome Nicole! Love that you are into nature, dogs, baking sourdough (I used to do that, but I think it made me eat more carbs as others in the family weren't as into it :smiling_face_with_smiling_eyes:). Looking forward to meeting you hopefully in the not-too-distant future!
Re: Welcome Nicole MastrellWelcome, Nicole! Great to have you on board and I look forward to working with you.
Re: Welcome Nicole Mastrell@stan_koprowski
Hi again Stan,
I am not sure about different flavors depending on the country, it is hard to tell. I think the flavor changes a little all the time partly depending on how old (more sour) it becomes before feeding etc. When moving country, a lot of parameters changes at the same time (the quality of the flour, the water, temperature in the kitchen etc.)
When first arriving here I found the sourdough starter was rising slower and blamed the chlorine in the water. However, now I found a better quality flour (higher protein) and it is picking up again. A lot of everyday parameters also influences the result when working with sourdough (temperature in the room, rising time, how you fold the dough etc.), that's one of the fun things about it, you never get exactly the same results and there is always room for improvement
.
Do you have experience with sourdough baking?
Re: Welcome Nicole MastrellWelcome to JMP @NicoleMastrell!
All of this talk about the art and science of sourdough bread making.... I'm taking notes of your dialogue with @stan_koprowski here. Do we have a DOE in the making? How can I help you set one up in JMP? :-D.
Re: Welcome Nicole MastrellWelcome to the JMP Family, Nicole!!!!
Re: Welcome Nicole Mastrell@NicoleMastrell ,
yes I have my sourdough stater as well; Almost 10 years now.
Recently, I have been an experimenting with adding blue cheeses and walnuts to express some purple coloring to the final product; presumably from the walnut oils.
I often use the âdiscardâ as well for flavoring pancakes, waffles and pizza crusts.
Re: Welcome Nicole MastrellI would love to taste it!
