I have a list of individuals measured for several variables (fruit load, leaf area, etc.), I would like to sort the individuals for all of the variables in parallel.

If I understand correctly, the menu option 'Tables > Sort' will do what you want. You can add multiple columns as in the screenshot below:
Ian's example sorts by height, then breaks ties using sex. That's perfect for producing tabulated results.
But when you say parallel, you might be asking about something like the kdTable function that does a multi-dimensional sort that is worthless for tabulated results, but perfect for asking "what is the nearest row to this multi-dimensional coordinate?"
