I thought this was going to be an easy one, but it seems to be a little more involved than I'd expected. What you need to know is what all the options are for the save command - and my manual isn't very informative on that, so what I'd normally do next is to run the command interactively and inspect the code that's been automatically generated as a result. However although I can load data
from
a text file and look at the resulting script associated with the resulting data table (it's shown below) to show a list of the various choices I can make, I can't find a way to do the same when exporting data
to
a text file. So how
do
I find out what all the options are for the save command? Anyone?

In the menu Preferences/Text Data Files you can you can change the export settings. There is check box for including labels, make sure it is not checked. This of course affects all files.

That'll solve the immediate problem, I'm sure - many thanks! To do that in code, the necessary option can be found by running "show preferences(all)" and looking in the "Export Settings" section.
The following should therefore answer the original question about how to export without labels - the first export leaves them out, whereas the second one includes them:
dt = open("$SAMPLE_DATA/Big Class.jmp");
Preference(Export Settings(Export Table Headers(0)));
dt << save("C:\File0.txt", text);
Preference(Export Settings(Export Table Headers(1)));
dt << save("C:\File1.txt", text);
