In the few weeks before the harvest, a new challenge occurs each year for the Moët & Chandon teams: the evolution of grape maturation is the object of attention. Thanks to the regular use of JMP, multi-vintage tables and regular sampling in the plots, we are able to accurately follow the ripening dynamics and propose optimal harvet dates for each of them. We propose to show through live manipulation of JMP how the tables are updated and used for our forecasts, how we model the evolution of some key features of the grapes, how we recalibrate evolution curves based on time-shifted follow-ups and how we predict optimal harvest dates per plot, vine region or grape variety. This presentation will be an opportunity to introduce the following features of JMP: table update (merge, concatenation, ...), spline modeling, formulas using complex line indexing features, prediction using spline coefficients, Graph Builder, follow up of maturation indicators on geographicals maps, and multi-period graphical comparisons (with the graphlet feature, new in JMP 15).
